Green Cherry

The fruit begins to form following pollination, developing into small green pinheads.

Biological Transformation & Agronomy

Once petals drop, the fertilized ovary begins cell division. In this phase (often called 'pinhead' stage), the two seeds that will form the coffee bean are established inside. The young fruit is hard, dense, and its chlorophyll-rich skin photosynthesizes actively to nourish the embryo.
